General description
Gelatin derived from cold water fish skin has low gelling and melting points. This gelatin will not gel at 10 degree celsius, hence they do not have bloom strength.
Application
Used as a blocking agent in immunochemistry.

Gelatin from fish skin can be used in the preparation of various gels based on their gelling characteristics. It can also be used as an additive in surimi processing to enhance the functional and mechanical properties of gel.

What is the melting point of this specific fish gelatin?

Dry gelatin, when heated to 100 °C in the presence of air, swells and becomes soft, disintegrating to a carbonaceous mass. Solidified solutions may be reliquified at 37°C.
