General description
Kasein aus Rindermilch ist ein Phosphoprotein. Bei Kasein werden vier Haupttypen unterschieden, die zusammen ca. 80 % des Gesamtgehalts an Protein in Rindermilch ausmachen: α-s1 Kasein, α-s2 Kasein, β-Kasein und κ-Kasein. Kasein wird als Hauptschutzbestandteil von Milch empfohlen.
Application
Kasein aus Rindermilch wird wie folgt verwendet:
- zur Herstellung von Kasein-Hydrolysaten
- als Kalibriersubstanz in der kolorimetrischen Biuret-Methode
- als Zusatzstoff in Nähragar zur Bestimmung der Protease-Aktivität
- zur Zubereitung einer proteinreichen Nahrung für unabhängige Replikatlinien von D. melanogaster
Biochem/physiol Actions
Partielle gastrointestinale Verdauung von Casein ist eine Fundgrube für bioaktive Peptide, wie z.B. β-Casomorphin. Allerdings reagiert Rindercasein nicht einheitlich; während die Varianten A1 und B zur Produktion von β-Casomorphin führen, ist es bei Variante A2 nicht der Fall.
