Glutathion-S-Transferase katalysiert die Bildung von Glutathionthioethern mit Xenobiotika, Leukotrienen und anderen Molekülen mit einem elektrophilen Zentrum. Weiterhin bildet Glutathion in Proteinen Disulfidbindungen mit Cysteinresten. Aufgrund dieser Mechanismen kann es den paradoxen Effekt haben, die Wirkung von Antikrebsmitteln zu verringern.
