Application
La amiloglucosidasa de Aspergillus niger se utiliza para hidrolizar los α-D-glucósidos. Puede utilizarse en la de fabricación de la cerveza y en la producción de pan y zumos. La amiloglucosidasa de Sigma se ha utilizado para hidrolizar el glucógeno en monómeros de glucosa con el fin de estudiar la acumulación de lípidos en el músculo esquelético [1]
Biochem/physiol Actions
La amiloglucosidasa de Aspergillus niger es capaz de hidrolizar los enlaces grupos glucosídicos α-D-(1-4), α-D-(1-6) y α-D-(1-3) de los oligosacáridos.[2] La amiloglucosidasa es una enzima extracelular que convierte el almidón en dextrinas y glucosa. La enzima se utiliza en la industria de procesamiento del almidón en la producción comercial de D- glucosa a partir del jarabe de maíz.[3]

The stability of this product in solution has not been evaluated. However, 172426 Glucoamylase (syn. Amyloglucosides) from Rhizopus, notes that solutions are stable when stored frozen in aliquots at -20°C for up to 3 months. Similar stability would be expected for A7420. Avoid freeze/thaw cycles of solutions.

The starting material for Product No. A7420 is Product No. A3042, which is a preparation of the enzyme in a 1 M glucose solution. This is dialyzed against water until the glucose concentration is less than 0.02%, and then lyophilized.
