Descrizione generale

Pectinase, also known as pectinolytic enzyme, is predominantly found in bacteria, fungi and plants.[1] polygalacturonase is a highly found enzyme among all the pectinolytic enzymes.[1]

Applicazioni

Pectinase from Aspergillus niger has been used to hydrolyze pectin layers in
  • activated sludge flocs[2]
  • bamboo powder for degumming process[3]
  • garden cress (Lepidium sativum) seeds to enhance testa permeability, visualized using tetrazolium staining solution[4]

Azioni biochim/fisiol

Pectinase found in plants aids in cell wall extension and softening of some plant tissues during maturation and storage. Polygalacturonase is the enzyme that catalyzes the hydrolysis of the polygalacturonic acid chain by addition of water. [1] Pectinase has wide range of industrial applications including, fruit juice extraction and its clarification[1][2], scouring of cotton, degumming of plant fibers and waste water treatment. In addition, it is also used in vegetable oil extraction, tea and coffee fermentations, bleaching of paper, in poultry feed additives and in alcoholic beverages and food industries.[1]
