パンクレアチンは、ブタの膵臓の外分泌細胞から産生されたトリプシン、アミラーゼ及びリパーゼ、リボヌクレアーゼ、並びにプロテアーゼなどの酵素成分を含有します。 このような酵素の組合せによってタンパク質、デンプン、及び脂肪を加水分解することができます。 パンクレアチンは、40℃の水中において5分間でその25倍以上の重さのジャガイモデンプンを可溶性炭水化物に変換し、pH 7.5、40℃において60分間でその25倍以上の重さのカゼインを消化し、pH 9.0、37℃においてオリーブオイルから分あたりmgパンクレアチンあたりマイクロ当量以上の酸を放出します。
