生化/生理作用

α-淀粉酶介导淀粉、麦芽寡糖和糖原在α-D-(1,4)-糖苷键上的水解。[1]芽孢杆菌是α-淀粉酶异构生产的重要细胞工厂。[5]此外,还有从枯草芽孢杆菌菌株中提取到细胞外分泌的耐热淀粉酶的报道。[6]

一个单位是在pH 6.9和25°C下每分钟释放 1 μmol 麦芽糖的酶量(采用产品货号 85642 作为底物)
