生化/生理作用

α-淀粉酶可将淀粉降解为麦芽糖等寡糖、葡萄糖和α-极限糊精。它可水解由三个或多个α-(1→4)连接D-葡萄糖单元组成的多糖的α-(1→4)葡聚糖键,无需水解α-(1→6)键。参与葡萄糖生成,对于能量获取至关重要。α-淀粉酶是一种广为人知的工业酶,适用于食品、洗涤、纺织、发酵和制药行业。
