α-淀粉酶(α-1,4-葡聚糖-4-葡聚糖水解酶)属于糖基水解酶 13 家族。两个天门冬氨酸残基和一个谷氨酸残基是 α-淀粉酶的主要催化残基。[1]所有淀粉酶都具有三个结构域,即具有中央(β/α)8 桶的结构域 A、结构域 B 以及包含结构域 C 的希腊钥匙模体的 β-结构。[1]

  • 植物性原生非晶颗粒淀粉的酶解[4]

生化/生理作用

α-淀粉酶介导淀粉、麦芽寡糖和糖原在α-D-(1,4)-糖苷键上的水解。[1]芽孢杆菌是α-淀粉酶异构生产的重要细胞工厂。[5]此外,还有从枯草芽孢杆菌菌株中提取到细胞外分泌的耐热淀粉酶的报道。[6]

单位定义

一个单位是在pH 6.9和25°C下每分钟释放 1 μmol 麦芽糖的酶量(采用产品货号 85642 作为底物)
