应用

鼠灰链霉菌产生的固定化葡萄糖异构酶可用于木糖的异构化。[1] 葡萄糖异构酶被用于食品工业,以生产高果糖玉米糖浆[2]
鼠灰链霉菌中的葡萄糖异构酶用于在木糖生产二氢过程中将木糖异构化为木酮糖。[3][4]它还可在合成酶法中从蔗糖中提制二氢,以催化葡萄糖异构化生成果糖。[4]

生化/生理作用

少量厌氧菌、真菌和植物可表达一种被称为D-木糖异构酶(XI)的细胞内金属酶。大多数细菌使用D-木糖异构酶将D-木糖转化为D-木酮糖。D-木糖异构酶(XI)将醛糖木糖和葡萄糖分别转化为它们的酮类似物木酮糖和果糖。[5]
葡萄糖异构酶广泛应用于各种工业领域中,例如生产高果糖谷物糖浆(HFCS)以及从半纤维素中提制乙醇。此外,还促进了先进生物化学和基因工程技术领域结构功能关系的研究。[6]

    1. This is a Novozyme product, Sweetzyme® IT Extra, which is an immobilized enzyme. It is glutaraldehyde crosslinked on polyethyleneimine, and intended to be used in a continuous fixed bed process (converting high dextrose syrup to high fructose syrup).

    1. This is a product of Novozymes, available commercially as Sweetzyme. This is an immobilized enzyme used in a fixed bed process to convert dextrose syrup to fructose syrup. This material is in granular form with a particle size range of 0.3-1.0 mm. This material is not intended to be solubilized.
