Das Rinderenzym ist durch drei Eigenschaften gekennzeichnet:
- Durch reversible konzentrationsabhängige Assoziation entstehen Formen mit höherem Molekulargewicht.
- Es bildet dichte ternäre Komplexe aus Enzym, reduziertem Coenzym und Substrat, deren Dissoziationsgeschwindkeit die Gleichgewichtsreaktionsgeschwindigkeit moduliert.
- Die Bindung verschiedener Nukleotidmodifizierer ruft zahlreiche unterschiedliche Wirkungen hervor.
L-Glutamat-Dehydrogenase katalysiert die Umwandlung von Glutamat zu α-Ketoglutarat.
