Tragant ist ein Gummi, das im Saft von verschiedenen Hülsenfrüchten aus dem Nahen Osten vorkommt. Es wird häufig als Gefriereinbettmedium zur Gewebekonservierung eigesetzt.
Anwendung
Gemischt mit Wasser ergibt Tragant ein kolloidales Hydrosol. Die Bassorin-Fraktion (die aus etwa 60–70 % der Verbindung besteht) quillt und bildet ein Gel. Die Quellung verleiht Tragantgummi die Fähigkeit, dicke, viskose Dispersionen und Pasten zu bilden. Es ist ein wirksamer Emulsionsstabilisiator.
