生化／生理作用
牛乳脂蛋白脂酶(LPL)具有最高的脂解活性。它与酪蛋白胶束有关。LPL调节甘油三酯利用度，具有位点特异性。脂酶通常催化甘油三酯的脂裂解，尤其是甘油三酯sn-1和sn-3位的脂肪酸。

以 p -硝基苯丁酸酯为底物，在 37°C、pH 7.2 条件下，1 个单位每分钟将释放 1.0 nmol p -硝基苯酚。
