生化/生理作用

酰化酶I是一种锌金属蛋白,可催化非天然和很少发生的α氨基酸的动力学分解。它对N-酰基L-α-氨基酸水解的对映选择性几乎是绝对的,但它接受具有广泛结构和功能性的底物。酰化酶I催化N-乙酰基-L-半胱氨酸和S-烷基-N-乙酰基-L-半胱氨酸的脱乙酰化。正丁基丙二酸是酰化酶I的抑制剂。S-烷基-N-乙酰基-L-半胱氨酸与短(C0-C3)和不分枝S-烷基取代已被发现是良好的酰化酶I底物。
