애플리케이션

Amyloglucosidase from Aspergillus niger is used to hydrolyze α-D-glucosides. It may be used in the brewing of beer and in the production of bread and juices. Amyloglucosidase, from Sigma, has been used to hydrolyze glycogen into glucose monomers in order to study lipid accumulation in skeletal muscle [1].

생화학적/생리학적 작용

Amyloglucosidase from Aspergillus niger is capable of hydrolyzing the α-D-(1-4), the α-D-(1-6), and the α-D-(1-3) glucosidic bonds of oligosaccharides.[2] Amyloglucosidase is an extracellular enzyme that converts starch to dextrins and glucose. The enzyme is used in the starch-processing industry in the commercial production of D-glucose from corn syrup.[3][4]

One unit will liberate 1.0 mg of glucose from starch in 3 min at pH 4.5 at 55 °C.

    1. The stability of this product in solution has not been evaluated. However, 172426 Glucoamylase (syn. Amyloglucosides) from Rhizopus, notes that solutions are stable when stored frozen in aliquots at -20°C for up to 3 months. Similar stability would be expected for A7420. Avoid freeze/thaw cycles of solutions.
