アゾカゼインは、実験動物でアミロイドAアミロイドーシスの誘導に用いられる炎症性物質です。
アゾカゼインは、非特異的なプロテアーゼの基質です。 カゼインの加水分解によってアゾ色素が培地中に放出され、この色素は波長440 nmの吸光度で検出されます。
