The Casein used to prepare this product is a mixture of Alpha-s1, Alpha-s2, Beta, and Kappa Casein. Combined, these forms of casein have a molecular weight range of 19 - 25.2 kDa. The Fluorescein isothiocyanate I isomer has a molecular weight of 389.38. The ratio of casein to FITC is approximately 11:1. A confirmed molecular weight has not been established.

Casein fluorescein isothiocyanate is mainly used as a substrate in estimating the protease activity of psychrotrophic bacteria. It is also used as a substrate for determining the activity of bacteria in milk.[4]
