生化／生理作用

皂甙是非离子表面活性剂，可形成水包油乳液并起到保护胶体的作用。皂甙用于通过火焰原子吸收分光光度法直接测定牛奶中的金属。
皂苷具有抗肿瘤、抗菌和抗虫害作用。在植物防御中起关键作用。皂苷也具有多种药理特性，如抗炎、抗真菌、抗细菌、抗寄生虫和抗病毒作用。皂苷对土壤根际细菌有调节作用。
