正磷酸单酯磷酸水解酶(酸最适)
酸性磷酸酶是一种非特异性磷酸单酯酶,存在于肿胀马铃薯块茎的细胞质和细胞壁切片中。它具有几个酸性氨基酸残基。[1][2]它存在于多达六个同工型中,具有不同的糖基化程度。主要马铃薯同工型是摩尔质量为96kDa的同型二聚体。[3]

生化/生理作用

酸性磷酸酶维持无机磷酸盐的浓度。它可在酸性条件下水解正磷酸单酯,还参与马铃薯的块茎发育。[3][4][5]可消除磷酸蛋白中的磷酸基团,例如酪蛋白、核黄素结合蛋白、胃蛋白酶原、卵清蛋白和磷脂等。[6]
