一般說明

橄榄油中富含酚类成分角鲨烯葡糖苷。特级初榨橄榄油(VOQ)富含抗氧化剂和潜在的活性氧清除剂。[1]橄榄油富含单不饱和长链脂肪酸,不易氧化。橄榄油可破坏黄嘌呤氧化酶活性,并可能具有调节肿瘤进展的潜力。[2]橄榄油中的生物酚可能在代谢紊乱、心血管疾病和神经变性中起到保护作用。[3]

應用

橄榄油已被用作小鼠代谢表型的口服补充剂 [4]。它已被用于溶解维生素E[5]、乳清蛋白[6]和药物。[7]

生化/生理作用

    1. According to the chemicals encyclopedia published by the Royal Society of Chemistry, 12th ed., Entry# 6965, oleic acid is soluble in alcohol, benzene, chloroform, ether, fixed and volatile oils, but is practically insoluble in water.

    1. Oleic acid is generally expected to be a clear, colorless to very faint yellow viscous liquid. It is sensitive to air and light. When it becomes oxidized, it acquires a much darker yellow to brown color.
