生化／生理作用

葡聚糖酶是一种水解葡聚糖中α-(1,6)-糖苷键的内葡聚糖酶。它具有许多工业和临床应用，例如食品加工、糖修饰和药物制备。葡聚糖酶广泛用于生产交替甜菜和异麦芽寡糖（IMO），这是一种益生功能食品。从葡聚糖酶获得的低分子量葡聚糖可用作合成血容量扩充剂。葡聚糖酶可与抗体偶联以检测肿瘤细胞。它通过使牙齿中的微生物葡聚糖沉积物解聚来防止牙菌斑的发生。因此，它被用于牙科护理产品。
