ペクチナーゼP4300は、真菌であるRhizops属種由来の天然ペクチナーゼ(ポリガラクツロナーゼ)です。ペクチン酸などのガラクツロナンにおける(1→4)-α-D-ガラクトシドウロン酸結合をランダムに加水分解します。本酵素は、植物細胞壁の中層にみられるペクチンを分解します。ペクチナーゼは、植物材料の浸軟および抽出プロセスの円滑化に役立ちます。細胞小器官を分離する前に、細胞壁を消化し植物プロトプラストを形成する場合に使用されます。
