生化／生理作用
在磷酸缓冲液中，Staphylococcus菌株V9蛋白酶特异性地切割多肽链天冬氨酸和谷氨酸残基的羧基侧。 当在碳酸氢铵缓冲液或醋酸铵中时，只切割谷氨酸残基的羧基侧。 该酶在pH4.0到7.8之间有最大活性。如果使用血红蛋白为底物，最大活性在pH4.0。 当酪蛋白为底物，最大活性在pH7.8。
