蛋黄中的卵黄高磷蛋白是富含聚阴离子磷酸丝氨酸的蛋白质。该磷酸糖蛋白包含α-螺旋和β-折叠结构元件,由于磷酸丝氨酸的存在,它们的组织不良。它代表约11%的卵黄蛋白,并且是亲水性的。
