一般說明
来自猪胰腺的脂肪酶(PPL)或猪胰腺脂肪酶是小型球状蛋白,N-端含有αβ型折叠区域。另含有催化三联体Ser、Asp和His残基和C端β-三明治结构域。猪胰腺脂肪酶属于羧酸酯酶家族的亚家族。
應用
猪胰腺脂肪酶已用于:
- 植物提取物的脂肪酶抑制分析
- 糊化淀粉/纤维混合物的体外消化
- 加入模拟肠液以模拟消化道条件,用于发酵燕麦中的发酵乳杆菌(L. fermentum)PC1的继续存活

生化/生理作用
猪胰腺脂肪酶(PPL)可催化脂肪(脂质)水解。它在大多数生物体的膳食脂质(如甘油三酯、脂肪、油脂)消化、转运和加工中起重要作用。猪胰腺脂肪酶具有高性价比,可用于生物转化反应。它具有高选择性,并具有催化活性。猪胰腺脂肪酶还可掺入去污剂,用于去除衣物上的油渍。
脂肪酶可催化水溶液中酯的水解和非水溶液中酯的合成。它们通过水解聚对苯二甲酸乙二酯中的酯键,产生羟基和羧基。
