一般說明

角叉菜胶是来自红藻细胞壁的粘多糖。 它们是由1,3α-1,4β-半乳聚糖组成的阴离子线性聚合物，每个二糖单元具有一个（κ-）、两个（ι-）或三个（λ-）硫酸盐。 在离子溶液中，κ-和ι-角叉菜胶自缔合成螺旋结构，分别形成刚性或柔性凝胶。 λ-角叉菜胶不会形成螺旋结构并且是非凝胶化的。 角叉菜胶被用作商业增稠剂和稳定剂。
以1%浓度溶于0.2M KCl溶液中时，为非凝胶状态

應用

角叉菜胶被用于在 体内 和 体外 实验中抑制通过巨噬细胞选择性细胞病变效应机制而产生的免疫应答。非凝胶状态的λ-角叉菜胶被用于诱导啮齿动物后爪炎症和炎性疼痛或气囊炎症模型。 最近，角叉菜胶被直接注射到啮齿动物的关节中，模拟关节炎疼痛和炎症。
