El alginato de sodio es la sal sódica del ácido algínico, un polisacárido encontrado en las algas marrones.[1] Se utiliza generalmente como estabilizador y espesante en la industria alimentaria.[2]

Aplicación

El alginato de sodio puede utilizarse para preparar:
  • Complejos polielectrolíticos a base de caseína cationizada para aplicaciones de liberación controlada de fragancias.[3]
  • Encapsulación o microcápsulas de aroma para aplicaciones cosméticas.[4]

Otras notas

Un ácido poliurónico, coloidal, hidrófilo, de cadena recta compuesto por residuos de ácido glucurónico y manurónico.

  2. I used to use a medium molecular weight sodium alginate (SA). Now, what if I use the SA with a lower or higher molecular weight? In this case, should I decrease/increase the amount of SA I use?

    1. A currently published frequently asked question on the product page notes, "The estimated molecular weight range for this material is 12,000 - 40,000 Daltons." Without knowing the "medium" molecular weight range previously used or the intended application, it is not possible to advise whether an adjustment in the amount of the product used is advisable.

  3. How is shipping temperature determined? And how is it related to the product storage temperature?

    1. Products may be shipped at a different temperature than the recommended long-term storage temperature. If the product quality is sensitive to short-term exposure to conditions other than the recommended long-term storage, it will be shipped on wet or dry-ice. If the product quality is NOT affected by short-term exposure to conditions other than the recommended long-term storage, it will be shipped at ambient temperature. As shipping routes are configured for minimum transit times, shipping at ambient temperature helps control shipping costs for our customers.     1. If this product has an expiration or retest date, it will be shown on the Certificate of Analysis (COA, CofA). If there is no retest or expiration date listed on the product's COA, we do not have suitable stability data to determine a shelf life. For these products, the only date on the COA will be the release date; a retest, expiration, or use-by-date will not be displayed.
      For all products, we recommend handling per defined conditions as printed in our product literature and website product descriptions. We recommend that products should be routinely inspected by customers to ensure they perform as expected.

    1. This product is a Flavors & Fragrance product typically used as a stabilizer and thickener in the food industry. The estimated molecular weight range for this material is 12,000 - 40,000 daltons. Currently, there is no product option available that has been tested for the ability to crosslink with calcium chloride. A brief search of the literature reveals a publication that used sodium alginate with a molecular weight of 100,000 daltons and an M/G ratio of 1.56 for calcium crosslinking studies. A link to this article, as well as potentially suitable products, has been listed below.

      A1112 : 60-70 % M 30-40 % G ; M/G ratio of 1.56. The degree of polymerization is 400-600. Molecular weight: approx. 30 000 - 100 000

    1. The mannuronic to guluronic acid ratio for this product is not determined on a lot-specific basis. However, the typical mannuronic acid content is approximately 61% and the guluronic acid content is approximately 39%. with a resulting M/G ratio of 1.56. The species of brown algae is Macrocystis pyrifera.
