Cellulase aus Trichoderma reesei entsteht durch die Submersfermentation eines ausgewählten Stamms des Pilzes Trichoderma reesei und katalysiert die Aufspaltung von Cellulose in Glucose, Cellobiose und höhere Glucosepolymere. Sie entspricht einer Molekülmasse von 68 kDa, der optimale pH-Wert liegt bei 6 und die optimale Temperatur bei 52 °C.

Cellulase bildet einen Komplex mit β-Glucosidase, um Cellobiose zu Glucosepolymer abzubauen. Der Ligningehalt in Stroh- und Furfuralresten behindert die Cellulaseproduktion.
