Amaranth diente als Farbstoff für die mikroskopische Visualisierung der Kropfkontraktion bei Schmeißfliegen. Er wurde in Elektrophoresegelen zum Verfolgen der Wanderung der Elektrodenpufferfront eingesetzt.

Amaranth ist ein Azofarbstoff, der vor allem in der Getränke- und Lebensmittelindustrie verwendet wird. Er gilt auch als endokriner Disruptor.
