General description
Virgin coconut oil (VCO) is obtained from the fresh mature kernel of Cocos nucifera.[1][2] It is mainly composed of lauric acid, which is responsible for most of its physiological and metabolic properties.[3] VCO shows better antioxidant capacity when compared to refined, bleached and deodorized coconut oil due to the presence of higher amount of phenolic compounds such as ferulic acid and p-coumaric acid.[4]
