酪蛋白是一种两亲性蛋白质。
酪蛋白是一种磷蛋白,是乳汁的主要蛋白成分,几乎全部在泌乳乳腺中表达。在牛乳中,根据钙敏感性将其分类为:αs1-, αs2-和 β-钙存在时酪蛋白沉淀;而 κ-酪蛋白仍保留在溶液中。

應用

Hammarsten牛酪蛋白已被用作海兔钙蛋白酶的底物来研究其活性。

生化/生理作用

部分消化的酪蛋白是生物活性肽的丰富来源,如β酪啡肽。然而,牛酪蛋白是不同质的;A1和B变异的确会导致产生β-酪啡肽7,但A2却不会。
酪蛋白可用于食品工业和非食品应用。它具有乳化、起泡、稳定、结合水分、凝胶等特性。酪蛋白还耐热耐酸。
