一般說明

酪蛋白是一种钙(磷酸盐)结合磷蛋白。它存在于哺乳动物乳汁中,约占所有牛奶蛋白的 80%。牛奶由四种酪蛋白肽组成,例如 αs1-、αs2-、β-和 κ-酪蛋白。酪蛋白以胶束形式存在于牛奶中。来源于牛的酪蛋白是由乳腺在多激素控制下产生的。

應用

牛乳中的酪蛋白溶液已被用于:
  • 测定碎牛肉中蛋白酶的活性及其对细菌素的影响
  • 作为非特异性底物来测量蛋白磷酸酶 2C(PP2C)融合的活性
  • 十二烷基硫酸钠(SDS)-聚丙烯酰胺凝胶,用于酪蛋白酶谱分析

牛乳中的酪蛋白溶液已被用作环腺苷酸依赖性蛋白激酶的底物。

生化/生理作用
