生化/生理作用
芹菜素是芹菜的主要黄酮类化合物,通过抑制一氧化氮的合成和 iNOS 的表达而发挥抗炎作用。
芹菜苷的抗氧化作用非常出名。可促进一种黑曲霉的胞外糖苷酶——β-apiosidase的生成。芹菜苷还具有抗血小板作用。
