生化/生理作用

黑曲霉中选定菌株生成的果胶酶制剂:主要含有果胶转移酶、多聚半乳糖醛酸酶和果胶酯酶以及少量的半纤维素酶和纤维素酶。果胶酶水解果胶,果胶是细胞壁的一个组成部分。它们可能攻击甲基酯化果胶或去酯化果胶。它是果胶酶活性的来源,还含有纤维素酶和半纤维素酶活性。果胶酶催化果胶和其他半乳糖醛酸中的a-(1-4)-Dgalactosiduronic键的随机水解。
