General description

Yeast is an inactive edible single-celled organism widely used in the food industry for baking, winemaking, and brewing. This product is dried irrespective of enzyme activity. Yeast serves as a substrate for lyticase.

Application

Yeast has been used:
  • as a structure modifier to alter the morphology and rheology of phase-separated biopolymer gels
  • to induce hyperthermia in rats to perform antipyretic activity test
  • in the extraction and enrichment method for the metaproteomic characterization of dissolved organic matter in groundwater samples
