生化/生理作用

纤维素酶可将不溶性植物纤维素聚合物底物分解成可溶性糖,主要是纤维二糖和葡萄糖。它能够特异性催化纤维素中β-1,4糖苷键的水解。动物本身不能消化纤维素,但是在肠道微生物的帮助下可以消化。
