丝胶蛋白是一种水溶性球状糖蛋白,可从家蚕中提取。它富含丝氨酸、天冬氨酸和甘氨酸。丝胶蛋白可在丝素纤维周围形成连续的粘层,以形成茧。它占茧总质量的20%至30%。丝胶蛋白由18种氨基酸组成,其中大多数含有强极性(羟基、羧基和氨基)的侧链基团。
