一般說明
淀粉酶是一种糖苷水解酶,它能裂解多糖(如淀粉或糖原)中的葡聚糖键,从而释放多糖分子。α-淀粉酶在动物、植物、和许多真菌中均有发现。在哺乳动物中,α-淀粉酶是淀粉酶的主要形式,是饮食消化的主要酶之一。α淀粉酶的活性和稳定性都依赖于钙离子。在人类中,α-淀粉酶的水平在胰腺和唾液分泌物中最高。血液和尿液淀粉酶水平的升高是由于胰腺疾病和唾液腺损伤引起的。唾液淀粉酶活性的增加也是交感神经系统活性增加的一个标志。
