哈茨木霉来源的裂解酶称为葡聚糖。它由具有β-1, 3葡聚糖酶活性的同工酶混合物组成。哈茨木霉来源的裂解酶可将酵母细胞壁寡糖水解为葡聚糖,制备原生质体。其稳定性受pH值变化影响。
