(±)-3-Chloro-1,2-propanediol is a potent human carcinogen.[1] It is formed as a product of acid hydrolysis of vegetable proteins during the process of cooking.[2]

Anwendung

(±)-3-Chloro-1,2-propanediol may be used as a reference standard for the determination of (±)-3-chloro-1,2-propanediol in food samples by gas chromatography with mass spectrometric detection (GC-MS).[2]
