General description

Zein ist ein Prolamin und ein in Alkohol lösliches Protein, das in Endospermzellen von Mais vorkommt. Zein ist ein Strukturprotein mit einem Molekulargewicht von 20 kDa und wird von dem Gen codiert, das sich auf dem kurzen Arm von Mais-Chromosom 7 befindet. Dieses Protein enthält keine essenziellen Aminosäuren wie Lysin und Tryptophan. Daher hat es nur geringen Nährwert.

Application

Zein wird beim Elektrospinnen als Biopolymer verwendet. Es wird auch genutzt, um für die Herstellung für von thermoplastischem Material Stärke zu mischen.

Biochem/physiol Actions

Zein findet Anwendung in der Herstellung von Fasern, Klebstoffen, Keramik, Tinte, Kosmetika, Textilien, Kaugummi und biologisch abbaubaren Kunststoffen. Dieses Protein ist ein biologisch abbaubares und nachhaltiges Agropolymer. Daher ist es potenziell ein guter Ersatz für herkömmliche Kunststoffe auf Mineralölbasis.

    1. This purity of this material is not determined. Zein is a mixture of 4 classes, α, β, γ, and δ. These forms interact and produce multiple bands in electrophoresis studies.
