A soluble chromogenic substrate for proteolytic enzymes.

Azoalbumin is a substrate for assaying proteolytic enzymes, majorly trypsin, pepsin[1] and cysteine proteinase.[2] The assay method offers precision and is easy to perform.[1]

Application

Azoalbumin has been used:

as a substrate for enzymatic assay of hyphal extracts[3]
for screening general protease activity in spent growth medium extract[4]
for screening S. rolfsii proteases[5]
