Descripción general

La leche de las vacas lecheras contiene la proteína β-lactoglobulina (BLG). Aparece de manera natural en una serie de variantes genéticas, y las variantes bovinas más prevalentes son la BLG A y la BLG B.[1]

Aplicación

βLa β-lactoglobulina se utilizó en el análisis citológico para el diagnóstico de la hipersensibilidad alimentaria en pacientes con síndrome de intestino irritable.[2]

Acciones bioquímicas o fisiológicas

Miembro de la familia de las lipocalinas, la βLg es una proteína pequeña de 162 aminoácidos con una masa molecular de ∼18 400 Da. Consta de un barril β de ocho cadenas (cadenas A-H) seguidas de una hélice α de tres vueltas y una cadena β final (cadena I) que forma parte de la interfaz de dimerización.[3]

Otras notas

Contiene β-lactoglobulinas A y B, que pueden aislarse mediante cromatografía.
