General description

Benzaldehyde dimethyl acetal, belonging to the class of benzyl derivatives,[1] is commonly used as a flavoring compound, having a sweet green and warm odor.[2] It is widely used in fruit, nut, cherry, and almond compositions in food industry.[2]

Application

Benzaldehyde dimethyl acetal may be used as an analytical reference standard for the quantification of the analyte in fresh and canned fish[3] and Cinnamomum zeylanicum[4] using gas-chromatography coupled to mass spectrometry (GC-MS).
