Descripción general

El dextrano es un polímero bacteriano extracelular de D-glucopiranosa. Consiste principalmente en enlaces α-(1→6) en la cadena principal y una cantidad variable de enlaces α-(1→2), -(1 3) α, -(→ α1→4) ramificados.

Aplicación

El dextrano del género Leuconostoc se ha utilizado:
  • para el aislamiento de islotes del tejido pancreático mediante centrifugación
  • como componente del tampón de bicarbonato de Earle para la perfusión placentaria
  • para el aislamiento de microvasos cerebrales de rata

Acciones bioquímicas o fisiológicas

El dextrano se utiliza comercialmente como medicamento, en particular como expansor de volumen del plasma sanguíneo. Se utiliza como adyuvante, emulsificante, portador y estabilizador en las industrias alimentaria, farmacéutica y química. Sephadex, un dextrano reticulado, se utiliza mucho para la separación y la purificación de proteínas. En la industria alimentaria, el dextrano encontró su uso como espesante en la mermelada y el helado. Inhibe la cristalización de los azúcares, aumentando por tanto la retención de humedad. Esto contribuye a mantener el sabor y el aspecto de diversos alimentos.
