Pectinase, also known as pectinolytic enzyme, is predominantly found in bacteria, fungi and plants. Polygalacturonase is one of the highly abundant enzymes among all the pectinolytic enzymes. Pectinase has a wide range of industrial applications including, fruit juice extraction and its clarification. In addition, it is also used in vegetable oil extraction, tea and coffee fermentations, bleaching of paper, in poultry feed additives and in alcoholic beverages and food industries.

Application
Pectinase from Rhizopus sp has been used for enzymatic digestion of leaves.
Used in plant protoplast preparation to digest cell wall prior to organelle isolation.
Biochem/physiol Actions
Pectinases hydrolyses pectin, which is a component of the cell wall.They may attack methyl-esterified pectin or de-esterified pectin. It is a source of pectinase activity, also containing cellulase and hemicellulase activities.
Unit Definition
One unit will liberate 1.0 μmole of galacturonic acid from polygalacturonic acid per min at pH 4.0 at 25 °C.
