General description

Amino acid with a non-polar side chain. Sulfur containing side chains facilitate the formation of disulfide bonds in proteins. Used as a reagent for reducing reactive sulfhydryl groups.

Application

  • Application of L-Cysteine Hydrochloride Delays the Ripening of Harvested Tomato Fruit.: This research demonstrates the effectiveness of L-cysteine hydrochloride in delaying the ripening process in harvested tomatoes, suggesting a potential approach for extending the shelf life of fresh produce and reducing post-harvest losses (Song et al., 2024).

  • L-Cysteine hydrochloride inhibits Aspergillus flavus growth and AFB(1) synthesis by disrupting cell structure and antioxidant system balance.: Highlights the antimicrobial properties of L-cysteine hydrochloride against Aspergillus flavus, presenting a promising compound for controlling fungal contamination in food products and enhancing food safety (Qiu et al., 2023).
