General description

Phosphatidylglycerol (PG) is one of the major phospholipids in food and biological tissues. PG is the anionic phospholipid in the membranes of Staphylococcus sp. and Escherichia coli. PG is present in low amounts in mammalian membranes. Structurally, PG has two acyl chains esterified to a glycerol, bonded to a headgroup structure that has phosphate and carries negative charge. PG is synthesized from cytidine phosphate-diacylglycerol (CDP-DAG).

Application

Egg PG has been used:
  • as a phospholipid to test the binding ability of SEIPIN, an integral membrane protein of endoplasmic recticulum
  • as a standard for photodynamic treatment
  • as a standard for the identification of phospholipids by thin layer chromatography and electrospray ionization-mass spectra (ESI-MS)

Biochem/physiol Actions

Phosphatidylglycerol (PG) is present in amniotic fluid and indicates fetal lung maturity. It functions as a precursor for cardiolipin in animals. In plants, PG is present in thylakoid membranes and plays a central role in photosynthesis.
