生化/生理作用

来自豚鼠肝脏的转谷氨酰胺酶由691个氨基酸残基的单一多肽链组成。它有六个潜在的糖基化位点(Asn-X-Ser或Asn-X-Thr),但它没有糖基化。分子量约为76.6kDa。它是钙依赖性的,有几个钙结合位点。在钙存在下,碘乙酰胺和N-乙基马来酰亚胺抑制该酶的活性。它催化小分子量胺类结合到蛋白质的γ-谷氨酰胺位点。在不存在小分子量胺类的情况下,它催化蛋白质的交联,导致 γ-谷氨酰基-ε-赖氨酸侧链肽的形成。肝转谷氨酰胺酶是非酶原的酶。
