General description

Amyloglucosidase, a disaccharide enzyme is a member of the alpha-glucosidase type. It is produced by several species of Aspergillus genus.

Application

Amyloglucosidase from Aspergillus niger is used to hydrolyze α-D-glucosides. It may be used in the brewing of beer and in the production of bread and juices. Amyloglucosidase, from Sigma, has been used to hydrolyze glycogen into glucose monomers in order to study lipid accumulation in skeletal muscle .
Amyloglucosidase from Aspergillus niger has been used to liberate free glucose in the Belgica antarctica larva homogenate. It has also been used in digestive enzyme mixture for starch digestion.

Biochem/physiol Actions

Amyloglucosidase from Aspergillus niger is capable of hydrolyzing the α-D-(1-4), the α-D-(1-6), and the α-D-(1-3) glucosidic bonds of oligosaccharides .

Unit Definition

One unit will liberate 1.0 mg of glucose from starch in 3 min at pH 4.5 at 55 °C.
